The secret of any Indian delicious dish is the choice and combination of the freshly ground spices. They unfold their aroma when they merge with the ingredients.

 

Some common ones are:

bay leaves, cloves, cinnamon, cardamom, coriander seeds, cumin, turmeric, etc..

 

And of course we use chilli.

In moderation, appropiate to the European tongue.
